Sheraton Maldives Appoints Daniel Samson as Director of Food & Beverage

Sheraton Maldives Full Moon Resort & Spa has appointed Daniel Samson as its new Director of Food & Beverage, bringing more than 15 years of international expertise across India, the Maldives, Qatar, and Bali.
Samson began his hospitality journey at Taj Hotels Resorts & Palaces in Chennai, starting behind the bar before moving into leadership roles at luxury resorts and hotels. He has successfully managed F&B operations across multiple outlets, spearheaded pre-opening teams, and introduced innovative dining concepts in India, Bali, and the Maldives.
Returning to the Maldives, Samson expressed his enthusiasm for curating dining experiences that tell a story, from destination dining setups and themed pop-up nights to seasonal and interactive menus. Each concept, he noted, will celebrate a local ingredient, cultural tradition, or global trend—leaving every guest with a lasting memory.
Sustainability is central to his philosophy. By sourcing local ingredients from island farms, the resort’s Furana Organic Garden, and freshly caught seafood, Samson ensures that guests enjoy authentic Maldivian flavors while supporting responsible practices. He highlighted that knowing a dish comes from a local fisherman or produce grown on the island adds meaning to every bite.
He is also committed to fostering creativity within his teams, encouraging collaborative tastings, idea-sharing, and hands-on involvement in crafting dishes, cocktails, and service experiences.
“We are thrilled to welcome Daniel as our Director of Food & Beverage,” said Greg Allan, General Manager of Sheraton Maldives Full Moon Resort & Spa. “His international experience, passion for storytelling through food, and commitment to sustainability will elevate our culinary offerings and further enhance the guest experience.”
Samson’s appointment underscores Sheraton Maldives’ commitment to delivering premium dining that is authentic, innovative, and deeply connected to Maldivian culture and environment.
